Lamb - Boneless, Stuffed Leg

1 Leg of Lamb – New Zealand – frozen – thawed and bone removed. I buy it when it’s on sale. Sometimes it’s cheaper than chicken. Usually, it’s wrapped in a netting. Cut off the netting in order to properly season it on all sides. You will be re-tying it with twine after stuffing it.

Ah, yes, meat loaf. The ultimate comfort food. Once a week, meat loaf. That’s it at my house. Gotta have it. Meat loaf, mashed potatoes, gravy, green tossed salad. Now, you know you’re home.
